It is a quali-quantitative exploratory research, of a descriptive cross-sectional type, which evaluated 167 teachers, using the Guia Alimentar para a População Brasileira and the Programa de Alimentação do Trabalhador (PAT). The satisfaction survey of snacks offered to teachers was carried out using an online form, which revealed that the snacks offered to teachers need improvements to meet nutritional recommendations and increase their satisfaction, aiming to offer healthier and more balanced options, through reduction the consumption of sweet and processed foods, as well as the elimination of sugar present in juice and offering healthier and/or whole foods, mainly fruit, which gained main prominence, given that 87 teachers cited it as a suggestion for improvements. Achieving superior performance requires practitioner to develop specific motor skills, where nutrition and hydration play crucial roles. Understanding appropriate hydration strategies and a suitable nutritional regimen, aligned with body composition, is fundamental for the performance and health of practitioners. Objective: Tuo understand, through an integrative literature review, the relationship between body composition, hydration and athletic performance in the specific context of Kendo, aiming to provide insights that can optimize both training and the health of practitioners, Materials and Methods: An interactive literature review was condueted, with article searches in PubMed, Virtual Health Library (BVS), and Scielo, covering the period from 2010 to 2024, in Portuguese, English, and Spanish. Results: Data analysis allowed the selection of five articles that fell into two categories: those that examined the body composition of Kendo athletes and those that evaluated the hydration of these athletes. Final Considerations: This study highlights the importance and complexity of factors such as hydration, nutrition, and body composition, which are essential for athletic performance, physical development, muscle strength, as well as the health and quality of life of Kendo practitioners. It was an descriptive, transversal study with a qualitative approach. Data collection was carried out after approval by the Research Ethics Committee Opinion No. 3,817,272 (CEP) of the Santa Casa de Misericórdia Foundation of Pará (FSCMP) through the direct application of a semi-open questionnaire containing eight questions, referring to good specific handling practices for dairy. The study included 13 handlers in the morning, afternoon and evening working in the lactation unit, who agreed to participate in the research, by signing the Informed Consent Form (FICF), which was carried out during the month of November in 2020 in a lactation Hospital located at the Hospital Fundação Santa Casa de Misericórdia in Belém PA. Data were processed in the IRAMUTEQ® software and descriptively analyzed using the word cloud method. The characterization of the participants, the majority 92% were female. With an average age of 45 years (standard deviation ± 8.2). This research allowed us to know, through basic lexicography, the most frequent vocabulary through the speeches, pointed out more specific to the handlers' understanding of questions related to good handling and hygiene practices in the lactation service. It was evident to analyze that most handlers have knowledge in the items handling and personal hygiene, use of protective equipment. They showed insufficient knowledge, difficulties in understanding the conservation of formulas. Therefore, despite having a certain knowledge, it is necessary to observe, if there is the execution of the activities in practice, they are carried out properly. Continuous monitoring is necessary. Due to the growing interest in reports of food selectivity, sensory sensitivities and atypical eating behaviors in individuals with ASD, this study aimed to create an educational booklet on feeding for children with ASD. Methodology: This is an integrative literature review, with articles published in Portuguese and English in the last six years for the elaboration of an educational product, carried out in the VHL, LILACS and SCIELO databases. The descriptors and combinations used were "autism spectrum disorder and nutrition", "autism spectrum disorders and child nutrition" in Portuguese and English, respectively. Results: With the selection of 07 articles, based on their data, an educational product, of the booklet type, entitled "Nutritional care for professional nutritionists" was structured, containing 24 pages, divided into 6 parts. Discussion: The nutritional aspects involved include habits and difficulties in relation to the feeding of children with ASD, the presence of dysfunctional eating habits being observed, and strategies are established for the management of the difficulties present and the symptomatology of the disorder. Final considerations: The characteristics present in ASD have pertinent impacts on the diet and nutrition of autistic children, making it necessary to manage the evident difficulties and adopt strategies aimed at improving the symptoms and quality of life of these individuals.Item Desenvolvimento de bebida láctea à base de açaí (Euterpe oleracea Mart.) para atletas e desportistas(Centro Universitário do Estado do Pará, 2024-06-11) Hundertmark, Pedro Paulo Silva; Smith, Theo Beltrão; Pantoja, Lorena Samara Gama; http://lattes.cnpq.br/1002440325255627; Gaspar, Daniela Pinheiro; http://lattes.cnpq.br/9245835771527449; Ribeiro, Joseana Moreira Assis; http://lattes.cnpq.br/5745114474901440The use of regional raw materials for the development of new food products with added value is a market trend, especially when it comes to a regional raw material with a high level of acceptance at national level, such as Açaí. The preparation of an açaí milk drink enriched with whey protein was carried out to meet the nutritional demands of athletes and sportspeople, aiming to provide energy and increase caloric intake during sports. To this end, in addition to the standard formulation, sweetened with refined sugar, three beverage formulations with different concentrations of sweeteners were tested to verify their acceptability. After preparing the formulations, samples of the four formulations were sent for microbiological and composition analysis. The results of microbiological analyzes proved the safety of the drinks that were sent to the physical-chemical and sensorial analysis stage using the hedonic scale and purchase intention methodologies. The results obtained demonstrated that after the standard formulation, the “F1” formulation with added sweetener was the best accepted by the public, and the results from the sensory tests demonstrated the feasibility of adapting a traditional product, açaí, to meet the specific demands of an expanding market niche, practitioners of physical activities and people looking for practical and nutritious alternatives for gaining muscle mass and increasing caloric intake, and also for individuals in need of replacing traditional sugar.Item Desenvolvimento de planilhas eletrônicas como ferramenta de apoio ao discente no atendimento nutricional(Centro Universitário do Estado do Pará, 2022) Oliveira, Wagner Rossi de; Figueiredo, Sandra Maria dos Santos; http://lattes.cnpq.br/8530470051297070; Gaspar, Daniela Pinheiro; http://lattes.cnpq.br/9245835771527449; Moreira, Jorvana Stanislav Brasil; http://lattes.cnpq.br/2045604189371660Information Technology (IT) have generated profound changes in pedagogical practices in the classroom. The insertion of this new reality in universities is a natural and necessary process. If applied correctly, they can contribute to more effective learning and greater motivation to learn among students. The present study was developed in two stages, where it sought to identify in the literature software-type technologies with educational potential, for nutrition students through an integrative literature review, so that an educational software could be developed, based on electronic spreadsheets, of the open simulator type, as an instrument to support the construction of knowledge in higher education in nutrition. Data collection was carried out between the months of December 2021 to March 2022, in the databases: Portal Scientific Electronic Library Online (SciELO); Virtual Health Library of the Ministry of Health (BVS) and Google Scholar. Original articles were included that answered the guiding question of this review, available in full, published in Portuguese or English. The final sample consisted of nine articles, which were published between 2016 and 2012. They show the potential of using software for teaching and learning, since four of them were based on spreadsheets, while four studies were authoring software. For the construction of the software, the recursive development methodology was used. The technology was developed using Microsoft Excel software, and allows the user to carry out nutritional anamnesis activities, anthropometric calculations, calculation of nutritional indexes and energy needs, quantification of macronutrients and micronutrients of a food plan from a table of nutritional composition of food and household measures. The development of the tool was successfully achieved, with that it is expected to assist the student in the steps of nutritional care.Item Estudo do valor nutricional e capacidade antioxidante dos frutos Mangaba (Hancornia Speciosa Gomes) e Noni (Morinda Citrifolia Linn) oriundos do Estado do Pará(Centro Universitário do Estado do Pará, 2022-09-29) Uría, Adriana Maria Del Pilar Sánchez; Gaspar, Daniela Pinheiro; http://lattes.cnpq.br/9245835771527449; Silva, Suely Maria Ribeiro da; http://lattes.cnpq.br/2211014646147942; Silva, Jair Campos da; http://lattes.cnpq.br/3628421238121779In the search for the identification of new natural sources with antioxidant capacity in the state of Pará, this work aimed to carry out the physicochemical characterization and evaluate the antioxidant activity and phenolic compounds in the pulp of noni and mangaba fruits. In the pulp of noni and mangaba, the proximate composition (moisture, ash, proteins, carbohydrates, lipids and fibers) was determined. Noni and mangaba pulps presented low calories 27.83 and 68 kcal/100g respectively. The antioxidant capacity was determined by the ABTS method. In the noni pulp, the antioxidant capacity was determined in the aqueous extract and in the MeOH extract (50%)/acetone (70%), the aqueous extract showing the highest antioxidant capacity (14.5 µM trolox/g), in the mangaba pulp the antioxidant capacity showed 8 µM of tro-lox/g). Noni and mangaba pulps showed high levels of vitamin C, 170.66 and 144 mg/100g, respectively. The phenolic compounds of noni and mangaba were 129.66 and 115 EAG mg/100g respectively. Being characterized by being a common metabolic problem during pregnancy, with a prevalence of 3 to 25% of pregnancies, becoming defined as an intolerance to carbohydrates, in various degrees. To identify the risk factors that influence the development of gestational diabetes. This work can be defined as a systematic literature review. For the execution of the work, original scientific articles were searched on gestational diabetes mellitus, high-risk pregnancy, glycemic control and risks of gestational diabetes. Carrying out the analysis of the studies, it is possible to say that the risk factors in the development of gestational diabetes mellitus are caused by several reasons, among them the analyzed studies verified that the majority of the women who presented gestational diabetes mellitus during their pregnancy, presented factors risk factors such as overweight/obesity both pre-pregnancy and during pregnancy, in addition to maternal age (over 30 years), number of pregnancies, family history (1st-degree relatives) and history of gestational diabetes in another pregnancy. The present work, through the scientific bias, finds that several factors contribute to the risk of gestational diabetes mellitus, among them are overweight, obesity, maternal age, excess weight gain during pregnancy, number of pregnancies and deliveries, family history and history of another pregnancy.Item Incentivo ao aleitamento materno: elaboração de uma tecnologia educacional para gestantes(Centro Universitário do Estado do Pará, 2022) Morais, Thaissa Ferreira; Figueiredo, Sandra Maria dos Santos; http://lattes.cnpq.br/8530470051297070; Ozela, Cilea Maria dos Santos; http://lattes.cnpq.br/3869556585803094; Gaspar, Daniela Pinheiro; http://lattes.cnpq.br/9245835771527449Exclusive breastfeeding (EBF) is a fundamental measure to protect and promote health. The World Health Organization (WHO) and the United Nations Children's Fund (UNICEF) have made efforts to protect, promote and support EBF, so that mothers can establish and maintain this practice until the recommended period. The work in question had the objective of producing a game-like educational technology for pregnant women, with a view to encouraging EBF. Descriptive, qualitative research, carried out in two stages, initially there was an integrative literature review and then the development of the game entitled “Amor de Peito”. From the synthesis of scientific evidence it was possible to identify the factors that lead to early weaning, which were: the use of bottles and pacifiers, breast complications, return to work or studies, early food introduction, low milk production and the belief in weak milk. Such axes-themes guided the elaboration of the game, with important information for the pregnant women's knowledge. However, riverside communities stand out as groups that face significant challenges in this context. To analyze the prevalence and factors associated with food and nutritional insecurity among families in the Usina Vitória community in Barcarena/PA. This is a quantitative and qualitative cross-sectional study carried out using a socioeconomic and demographic questionnaire and the Brazilian Food Insecurity Scale (EBIA), with 52 families totaling 180 people selected as participants. The prevalence of severe food insecurity was found in 35% of the population examined, and moderate in 29%. In 100% of families with more than five children, as well as in households with more than four people, food insecurity was observed. It was found that 63% of families were headed by women. As for education, primary education predominated with 61%. These results highlight the need for an in-depth analysis of current social, economic and food security policies, with a focus on meeting the needs of people experiencing moderate and severe food insecurity. The majority of the population has a fragile socio-demographic and economic profile, which characterizes the condition of food insecurity, mainly social and economic factors, such as family composition and income of just one minimum wage. The low level of education found also contributes to reducing the chances of better remuneration and professional opportunities. It is necessary to reformulate social programs, increase awareness about financial and nutritional education, as well as promote policies aimed at reducing income inequality. Furthermore, this data can be used to inform decision-making and directing resources to address food insecurity in different population groups.Item Rotulagem nutricional de barras de chocolate ‘’Bean To Bar’’ com diferentes porcentagens de cacau(Centro Universitário do Estado do Pará, 2021) Lima, Gabriela Borsero; Gaspar, Daniela Pinheiro; http://lattes.cnpq.br/9245835771527449; Diogo, Andrea Nilza Melo; http://lattes.cnpq.br/7046331651654191; Silva, Suely Maria Ribeiro da; http://lattes.cnpq.br/2211014646147942The industrialization of food systems together with the need for product regulation and minimization of customs barriers for food products becomes essential to guarantee their quality and, when combined with nutrition labeling, results in a measure of health education, aiming to generate greater consumer autonomy and guaranteeing their right to information with the perspective of preserving individual and collective health. Given the economic and social importance of cocoa in the state of Pará and the need to strengthen enterprises that value the Amazon, this study aimed to establish mandatory nutritional labeling of ''Bean to bar’' chocolate bars with different cocoa contents from an artisan chocolate factory located in the municipality of Ananindeua - PA. Three different batches of chocolates with different cocoa contents (50%, 60%, 70% and 80%) were analyzed in triplicate, and the moisture, ash, crude protein, total lipids, carbohydrates and sodium contents of the four bars were verified. Based on the analysis carried out and rules established by the food legislation, it was possible to establish mandatory nutritional labeling of products, including nutritional table, labeling words, ingredients list, batch identification, health claims and frontal labeling.
