Item Açaide: feira virtual de açaí(Centro Universitário do Estado do Pará, 2022) Gomes, Marcos Vinícius Vasconcelos; Hermes, Mário Cosenza; Carmo, Ricardo Melo Casseb do; http://lattes.cnpq.br/4933624262290855; Sousa, Marcos Paulo Alves de; http://lattes.cnpq.br/6713232502495902; Cereja, Fabiola Alves; http://lattes.cnpq.br/4434149523451690Açaí is a fruit very present in the lives of the inhabitants of the state of Pará due to its cultural and biological relevance. This importance is explained in indigenous folklore, in which a legend tells the story of its origin, treating it as a food that saved an entire tribe. But not everything is fantasy, açaí is a food that has many nutritional benefits that have been discovered and explored since the 1990s. This interest produced a growth in the demand for the fruit and its derivatives, resulting in the need for technological solutions in several parts of its productive chain. Thereby, the present work aims to create a mobile application that works as an ad marketplace for the açaí market, optimizing its marketing and bringing ease to its members. For this, it was essential to use the IBGE locations API, which provided the manipulation of the counties of Pará as data for various features of the application. Employing technologies such as Flutter and Firebase, it was possible to produce a product that considers the particularities of the açaí market and has the features to assist in its gaps. State of Pará has a high incidence of gastric cancer. In 2018-2019, according to the National Cancer Institute, gastric cancer was the second most frequent in men (12.35/100,000 inhabitants) and the fifth most frequent in women (5.34/100,000 inhabitants in the North Region). Often, the diet of the local population is pointed out as an important factor for the occurrence of epigastric pain, gastritis and gastric cancer. It was hypothesized that the excessive consumption of some elements of this cuisine may contribute to an excess of stomach acidity, increasing the activity of the H+/K+ pump in the parietal cell membranes of the stomach, which extracts K+ from the lumen and pumps H+ into it, acidifying -O. Therefore, the following research intends to investigate the association between the consumption of açaí, often consumed with cassava flour, both rich in K+, and the manifestation of epigastralgia. Thus, data from a center and thirty-three (133) patients were used in this crosssectional study, data from 133 patients treated at the Hepatology and Gastroenterology Clinic of CESUPA were used through a cross-sectional study. Data analysis was performed using the statistical computing program R (www.r-project.org), calculating the prevalence ratio (PR, ± 95% confidence interval [ICI95% ]), in addition to analyzing proportions with Fisher's exact test (alpha = 0.05). This work was approved by the Ethics Committee (Opinion 5,429,013). Obtaining as a result that patients who consume açaí were more likely to present epigastric pain as a clinical symptom (PR = 3.692 [CI95%: 1.226-10.14], p = 0.0247). Concluding that the consumption of açaí may have a prone effect to epigastric pain. However, further investigations need to be carried out to better clarify this finding.Item Desenvolvimento de bebida láctea à base de açaí (Euterpe oleracea Mart.) para atletas e desportistas(Centro Universitário do Estado do Pará, 2024-06-11) Hundertmark, Pedro Paulo Silva; Smith, Theo Beltrão; Pantoja, Lorena Samara Gama; http://lattes.cnpq.br/1002440325255627; Gaspar, Daniela Pinheiro; http://lattes.cnpq.br/9245835771527449; Ribeiro, Joseana Moreira Assis; http://lattes.cnpq.br/5745114474901440The use of regional raw materials for the development of new food products with added value is a market trend, especially when it comes to a regional raw material with a high level of acceptance at national level, such as Açaí. The preparation of an açaí milk drink enriched with whey protein was carried out to meet the nutritional demands of athletes and sportspeople, aiming to provide energy and increase caloric intake during sports. To this end, in addition to the standard formulation, sweetened with refined sugar, three beverage formulations with different concentrations of sweeteners were tested to verify their acceptability. After preparing the formulations, samples of the four formulations were sent for microbiological and composition analysis. The results of microbiological analyzes proved the safety of the drinks that were sent to the physical-chemical and sensorial analysis stage using the hedonic scale and purchase intention methodologies. The results obtained demonstrated that after the standard formulation, the “F1” formulation with added sweetener was the best accepted by the public, and the results from the sensory tests demonstrated the feasibility of adapting a traditional product, açaí, to meet the specific demands of an expanding market niche, practitioners of physical activities and people looking for practical and nutritious alternatives for gaining muscle mass and increasing caloric intake, and also for individuals in need of replacing traditional sugar.Item A importância do planejamento e controle da produção: estudo de caso em uma indústria de açaí(Centro Universitário do Estado do Pará, 2021) Garrido, Toléu Rodrigues Coelho; Mendes, Vinícius Gemaque; Conde, Cláudio Luciano da Rocha; http://lattes.cnpq.br/4768582829135033The companies are inserted in a highly competitive and volatile market, and in order to establish themselves and obtain a competitive advantage over competitors, they must to take advantage of modern management tools that allow decision-making to be strategic and beneficial to their operations. Therefore, Production Planning and Control is an important tool to support business decision-making. Through a case study in an açaí processing company located in the city of Castanhal-PA, the study aimed to demonstrate the importance and benefits of applying the techniques and tools of Planning and Production Control (PCP) in the studied company. It was concluded that through the use of information from the PCP and the results of the case sudy, the company made the correct decisions in relation to the investments made during the years of operation, as well as reaching an excellent percentage of productive efficiency.
